Pasta con Rucola, Pomodorini e Scaglie di Mandorle

Penne Pasta with Rucola, Cherry Tomatoes and Roasted Almonds

This is a simple yet delicious pasta which is a favorite of mine to serve at lunch, it only requires a few ingredients but - like any good Italian pasta, it is a crowd pleaser when made with fresh organic ingredients. 



  • Penne pasta (100g per person) 

  • Fresh rucola

  • 2 cloves of garlic 

  • A few handfuls of almonds 

  • Olive oil 

  • 500g fresh cherry tomatoes 

  • Sea salt 

  • Black Pepper 



  • Prepare your almonds by chopping into slices and browning them in a pan. Set aside. 

  • Put a pot of water to boil on the stove, making sure to add a pinch of salt.

  • Roughly chop the tomatoes into cubes and set aside.

  • Add your pasta to the boiling water, follow cooking instructions on the packet - perhaphs cooking a little less than instructed to make sue it is al dente. 

  • Fry the whole cloves of garlic in a healthy amount of olive oil in a pan.

  • Once the garlic cloves have flavoured the oil after a few minutes, remove them and add the cubed tomatoes, cooking for a few minutes.

  • Add the pasta together with tomatoes and oil.

  • Add the fresh rucola to the mix and stir. 

  • Finish with chopped almonds, sea salt and black pepper.
